Spiced Carrot and Coconut Fritters


Ingredients (serves 1 )

1 medium carrot (skin on)
1/2 a small red onion
1 large egg
1/2 teaspoon chipotle paste
1tsp finely chipped fresh basil leaves
1tbsp coconut flour
Pinch of black pepper

1 tablespoon of olive oil to cook

To serve
Cold fresh tzatziki (feel free to make your own! …. I buy it)
Fresh rocket leaves
Extra virgin olive oil
Parmesan shavings


  1. Grate the carrot and finely chop the red onion (you can also grate the onion but it can be a bit tricky!).

  2. Crack the large egg into a bowl and add the carrot and onion. Add the teaspoon of chipotle, black pepper, coconut flour and basil. Mix together thoroughly, making sure to mix the chipotle paste well!

  3. With your hands, split the carrot mixture into two or three (depending on what size fritters you would like). Shape into round patties and fry on a medium heat in a large non-stick pan with olive oil. Flip the patties and cook until both sides are golden and cooked through.

  4. Serve the fritters hot with fresh rocket, tzatziki, parmesan shavings and a drizzle of olive oil.
