No Flour - Protein Pancakes

Ingredients (serves 1)

For the pancakes:

2 Large free range eggs

1 yellow banana

1 tbsp whole oats

1tbsp unflavoured protein powder

2tbsp soy milk

2 dried figs

1/2 tsp Vanilla essence

A little oil for frying

Topping:

3tbsp Frozen raspberries

1tbsp fresh raspberries (optional)

Your favourite yogurt (I like 0% fat greek yogurt or quark)

1tbsp seeds or granola

Method:

  1. In a good blender or nutribullet, blend all the pancake ingredients together until smooth. In a good non-stick pan on a LOW heat, fry a little of the mixture in a little oil. I would suggest you make the pancakes on the smaller size, as they are easier to flip! Cook until golden brown. (remember they behave differently to ‘usual’ pancakes and they can burn faster)

  2. In a small bowl, microwave the frozen raspberries until they are soft enough to squash with the back of a fork. Continue to microwave until you make a thick hot raspberry coulis.

  3. Once you have made all the pancakes, top them with a tablespoon of your favourite yogurt, the raspberry coulis, fresh raspberries and the seeds!
