Fajita Bowl



4 chicken breasts (cut into strips)

1 Red pepper (cut into strips)

1 Green pepper (cut into strips)

1 Large onion (cut into strips)

1 Sachet of your favourite fajita spice (I like Old El Paso or Mexican Discovery)

1 Tablespoon olive oil

2 Sachets/Pouch microwave brown rice or 2 mugs full of dry brown rice

Options To Top:

Avocado/guacamole, coriander, salsa fresh chillis, fresh radish, kidney/black beans.


1. In a large frying pan, fly the onion in a little olive oil until soft and golden. Add the strips of chicken breast to the pan and fry until cooked through.

2. Add the dry fajita spice mix along with 100ml water to make a paste in the frying pan.

3. Continue to cook the chicken and onions on a medium heat and add the peppers to the pan. Make sure you cover mix in spice paste. Fry the mix until it is sticky and golden.

4. Serve the mix with the piping hot rice, and top with your favourite toppings. I like to add guacamole, salsa and fresh lime.
