A perfect accompaniment to any meal (hot or cold!)
1 Handful large spinach leaves (finely chopped)
1 small clove garlic (crushed)
125g cooked quinoa (red or/and white)
1 Teaspoon butter
Salt and pepper to taste
1. Melt the bitter In a non-stick frying pan.
2. Add the spinach and garlic. Cook until the spinach is beautifully soft and wilted. Add the cooked quinoa, mix thoroughly.
3. Serve piping hot, and season to taste.
