Pomegranate eggs

Serves 1

Ingredients:

½ ripe avocado roughly smashed

1/2 lime for on the side ( ¼ for the side and ¼ juice for the avocado)

20g pomegranate seeds

10g watercress

30g chorizo

10g feta crumbled on top

2 poached eggs

70g cherry tomatoes

1 slice/2 smaller slices of ciabatta bread

Method:

  1. Cut the chorizo into small chunks and cook on a low heat until crispy
  2. Slice the cherry tomatoes into quarters and mix the smashed avocado, add the juice of ¼ of a lime
  3. Place the avocado on the toasted ciabatta. Top with the chorizo crumbled feta, pomegranate seeds and watercress.
