Handful of asparagus spears (sliced)
8 x eggs
1 bunch spring onion (chopped)
100g Chorizo
1 handful grated cheddar

1. Preheat oven to 200°C
2. In an overproof pan, sauté the spring onions, asparagus, mushrooms, red pepper and chorizo in 2 tbsp of olive oil.
3. whisk together 8 eggs and pour over the mixture. Cook for a couple of minutes.
4. Sprinkle the cheddar on top and bake for 12-15 minutes

Serve with a big salad.
