Fig Chutney

Makes 1 Jar


50g dried figs, finely chopped
1tsp sugar
1tbsp Olive oil
30ml balsamic vinegar
2 garlic cloves, finely sliced
2 onions, finely sliced
salt and pepper


1. In a large pan, soften the onions and garlic in the olive oil - Cook over a low heat for 20 minutes (do not allow to burn)
2. Add the sugar, vinegar, and chopped figs. cook for a further 5-10 minutes.
3. Season to taste
4. when cooled, put into jars or ramekins and seal (Store in the fridge for up to 2 weeks)
