Chicken Tikka Masala

Served with broccoli, Brown rice and Quinoa

Serves 4


4 chicken breasts (chopped into cubes)

2 cans chopped tomatoes

1 onion

2tbsp greek yogurt

200g spinach

30g coriander

200g cooked brown rice (approximately 100g dry weight)

200g cooked quinoa (approximately 100g dry weight)

340g Broccoli (1 big Broccoli)

2 heaped tbsp tikka masala pataks spice paste


  1. In a big saucepan, soften the onion in a splash of water.  
  2. Add the spice paste and chicken – fry until cooked through.
  3. Add the chopped tomatoes, Greek yogurt, coriander and spinach. Simmer for 20 minutes.
  4. Roast the broccoli until golden (or serve steamed/boiled)
  5. Serve the brown rice and quinoa mixed together.
  6. Garnish with coriander
