Boursin Chicken

Serves 1

Ingredients:

1 chicken breast (chopped)

1 handful of petit pots/peas

1 handful fresh or frozen spinach

1 handful sugar snap peas

16g Boursin

1/4 of a chicken or vegetable stock cube

Method

  1. With a little olive oil, fry the chicken in a frying pan. Fry until cooked through.
  2. In the pan add the petit pois, spinach and sugar snaps.
  3. Add the boursin cheese, quarter of your chosen stock cube, and 150ml of water. Stir well. 
  4. Simmer on a low heat for 15minutes until piping hot. 
  5. Serve immediately with any vegetables of your choice! (I choose asparagus)
