Avocado and Ricotta dip

Perfect to share with friends, or to eat as a fabulous topping for toast. This makes enough for one person to have on toast/to use as a dip, however as a sharing starter I would suggest this serves two.


1/2 a large ripe avocado

1 tablespoon of plain ricotta

Juice of half a lemon

1 teaspoon pumpkin seeds

1 teaspoon de-shelled crushed pistachios

1 teaspoon extra virgin olive oil

A pinch of salt and black better

1 wedge of lemon for the top

1. In a bowl, mix the avocado, ricotta and lemon juice together using the back of a fork . Stir until it makes a rough paste. Though you can use a blender if you like your dip to be smooth.

2. Stir in the pumpkin seeds and pistachios.

3. Drizzle the olive oil on top and season to taste.

4. Squeeze the wedge of lemon on top and serve immediately
