Avocado and Parmesan Toast

Makes 4 slices.


4 thick slices of fresh rye bread (toasted)

1 ripe avocado

The juice of 1 lime

10g Chopped basil leaves (roughly half a standard pack)

80g Parmesan shavings

Salt and Pepper to taste


  1. In a mixing bowl, roughly mash the avocado with the back of a fork. Add the parmesan shavings, lime juice and basil. Season to taste. 
  2. Serve the cold avocado mix on the hot toasted rye bread
  3. Enjoy! Serving suggestion for a snack is 1 slice, for a main meal 2 slices.
