150g oats

45g dried apricots (chopped finely)

40g mixed nuts

2 mashed bananas

1 tbsp melted coconut oil

2 tbsp honey

1 tbsp cinnamon

1 tsp vanilla essence

pinch of salt


  1. Preheat oven to 190 degrees C
  2. Add the bananas to a food processor & pulse until they are mushy. Mix together the oil, honey & vanilla in a pan over a medium heat before adding the bananas.
  3. Mix together the oats, apricots, nuts, salt & cinnamon in a separate bowl before adding them to the apple, oil, honey & vanilla mix
  4. Press the mixture into a baking tin lined with baking paper & bake for 15-20 minutes until golden
  5. Cut into 6 even slices.
